Tempeh Taco Tuesday
Taco Tuesday is an almost perfect creation; it' s a reasonable choice for weeknight cooking that' s fun to pronounce and universally loved. But is it lacking a bit on the alliteration? Wouldn' t it be just a little more fun, and a little tastier, if we changed it to Tempeh Taco Tuesday? If you' re bored of beans, turn to tempeh to up your veggie taco game. Please refrain from picturing unseasoned fermented soybean chunks on a tortilla and stick with me for a minute here. In this recipe, crumbled tempeh is merely a protein–rich vehicle for your favorite taco seasoning packet. The tempeh provides more texture than beans alone and readily soaks up flavor from the seasoning. Tempeh is less processed than mock beef and cooks in a matter of a few minutes. Plus, you avoid the unpleasant smell of raw ground beef. Tempted to give Tempeh Taco Tuesday a try?
